Ingredients:
1 cup potatoes, diced ½ inch
1 cup celery, diced ½ inch
1 cup onion, diced ½ inch
1 cup green pepper, diced ½ inch
1 cup leeks, diced ½ inch
¾ cup chopped clams (canned or fresh)
¾ tablespoon coarse ground black pepper
1 ½ tablespoon salt
¾ tablespoon whole thyme
6 bay leaves
1 teaspoon Tabasco
¾ cup sherry wine (optional)
2 cups water
¾ cup clam juice (drained from canned clams or purchased separately in can)
¾ cup butter, melted
1 cup flour
2 quarts half-and-half
Method:
Combine melted butter and flour in oven-proof container and bake at 325 degrees for 30 minutes. In large saucepan, combine remaining ingredients except half-and-half. Simmer until potatoes are thoroughly cooked. Stir butter-flour mixture into chowder and stir until thick. Mixture will be slightly less thick than cookie dough. Remove chowder from heat. Stir in half-and-half until blended. Heat to serving temperature, stirring occasionally.
Serve immediately.

Zuppa Toscana
Zuppa Toscana is our favorite. I finally found a recipe that I like. I adapted it from The Pioneer Woman.

- 1/2 bunches Kale, Picked Over, Cleaned, And Torn Into Bite Sized Pieces
- 12 whole Red Potatoes, Sliced Thin
- 1 whole Onion, Chopped
- 1-1/2 pound Italian Sausage
- 1/2 teaspoon Red Pepper Flakes (more To Taste)
- 2 cups Low Sodium Chicken Broth
- 2 cups Whole Milk
- 4 cups Half-and-half
- Splash Of Heavy Cream
- Fresh Or Dried Oregano
- Black Pepper To Taste
Prepare the kale and set it aside.
In a medium pot. boil sliced potatoes until tender. Drain and set aside.
In a large pot, crumble and brown the Italian sausage. Drain as much as the fat as you can. Stir in the red pepper flakes, oregano, chicken broth, milk, and half-and-half. Simmer for 30 minutes.
Give it a taste and adjust seasonings as needed. Add the potatoes, a splash of heavy cream for richness, then stir in the kale. Simmer an additional 10-15 minutes, then serve.

Tomato Basil Soup
Oliver and I had this the other night and it was so good (and surprisingly quick), especially with the fresh basil from our garden.
FORMULA:
1 stick of unsalted butter
2 medium yellow onions, chopped
3 cloves garlic, chopped
28 ounces canned whole plum tomatoes or crushed tomatoes
2 1/2 cups of chicken stock
1 1/2 cup of cream or half and half
2 teaspoons sea salt
1/4 teaspoon freshly ground black pepper
Fresh torn basil
freshly grated asiago cheese on top (optional)
PROCESS:
1. Melt butter in a large saucepan over medium-low heat. Add onion and garlic; cook, stirring, until onions have softened, about 15 minutes.
2. Add tomatoes, chicken stock, salt, and pepper; bring to a boil. Reduce heat to low and cook until tomatoes, onions, and garlic are soft, 10 to 20 minutes. Then add cream or half and half.
3. Using an immersion blender, blend soup for a couple of minutes until it is smooth. If soup seems too thick, stir in some extra stock to thin. Serve immediately and top with torn basil and asiago cheese.

Roasted Red Pepper Soup
This recipe is from Sunset. I love Sunset recipes.
FORMULA:
- 3 large (1 1/2 lbs.) red bell peppers
- 3 medium thin-skinned potatoes, peeled and chopped
- 1 large onion, chopped
- About 3 tbsp. extra-virgin olive oil, divided
- 4 cups vegetable or chicken broth
- 1 teaspoon kosher salt
PROCESS:
Put peppers on a baking pan and broil 3 in. from heat, turning as needed until all sides are charred, 10 to 12 minutes. Cool; remove stems, seeds, and skin. Coarsely chop peppers.
In a large saucepan over medium-high heat, cook onion in 2 tbsp. oil, stirring, until lightly browned, 6 to 8 minutes. Add potatoes, peppers, broth, and salt. Cover and bring to a boil; reduce heat and simmer until potatoes are tender when pierced, 10 to 15 minutes.
In a blender, purée soup in batches, holding lid down with a towel. Pour back into saucepan and thin to desired consistency with more broth if you like; reheat until hot. Drizzle each serving with a scant 1 tsp. oil.
